TECHNICAL SHEET
An oxidative aging wine, obtained from the partial fermentation of Pedro Ximénez grape must previously sun-dried. Aged for about 12 to 14 years using the solera and criadera system in American oak barrels. It is very sweet, with an alcohol content of 17.5% vol., and is presented in 75 cl bottles.
TASTING NOTES
Dark mahogany in color with brilliant highlights, it presents powerful aromas of raisins, with nuances of licorice, coffee, and other dried fruit notes. On the palate, it is very smooth, warm, and sweet, with an excellent balance of acidity and sweetness that gives it great volume and persistence.

PAIRING
Many sommeliers say Pedro Ximénez is not a wine for dessert, but rather it is the dessert itself. Perfect with dark chocolate, excellent with ice creams, and its harmony with blue cheeses is very enticing.
