{"id":1254,"date":"2017-10-04T10:31:26","date_gmt":"2017-10-04T10:31:26","guid":{"rendered":"https:\/\/delgadozuleta.bgoapps.es\/?p=1254"},"modified":"2017-10-04T10:31:26","modified_gmt":"2017-10-04T10:31:26","slug":"jose-antonio-sanchez-pazo-entrevistado-motivo-la-isw","status":"publish","type":"post","link":"https:\/\/delgadozuleta.com\/en\/blog\/2017\/10\/04\/jose-antonio-sanchez-pazo-entrevistado-motivo-la-isw\/","title":{"rendered":"Jos\u00e9 Antonio S\u00e1nchez Pazo, entrevistado con motivo de la ISW"},"content":{"rendered":"<p>Nuestro en\u00f3logo y director t\u00e9cnico, Jos\u00e9 Antonio S\u00e1nchez Pazo, ha sido entrevistado con motivo de la cuarta edici\u00f3n de la International Sherry Week, que se celebrar\u00e1 entre los d\u00edas 6 y 12 de noviembre.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>\u00bfCu\u00e1nto tiempo llevas trabajando con\/para el vino de Jerez y concretamente en esta bodega?<\/strong><\/p>\n<p>Llevo m\u00e1s de 30 a\u00f1os trabajando y disfrutando con nuestros vinos. Comenc\u00e9 mi trayectoria en la Estaci\u00f3n de Viticultura y Enolog\u00eda, en la calle C\u00f3rdoba, y he pasado por varias bodegas del Marco. Actualmente llevo nueve meses en Delgado Zuleta como director t\u00e9cnico y en\u00f3logo, y sigo disfrutando a\u00fan m\u00e1s si cabe.<\/p>\n<p><strong>\u00bfQu\u00e9 te impuls\u00f3 a convertirte en un hacedor de vinos de Jerez?<\/strong><\/p>\n<p>Cuando estudiaba Ciencias Qu\u00edmicas tuve como profesor a D. Luis P\u00e9rez, y fue \u00e9l, en su asignatura de Enolog\u00eda, quien me mostr\u00f3 lo apasionante de este mundo. No hizo m\u00e1s que ratificar mi idea de que\u00a0 ten\u00eda de trabajar en una \u00a0bodega. A partir de ah\u00ed enfoqu\u00e9 mis esfuerzos en poder conseguir el objetivo. En 1988, la Bodega Wisdom &amp; Warter me dio la oportunidad de comenzar a trabajar en Jerez, y la aprovech\u00e9. Y hasta ahora.<\/p>\n<p><strong>\u00bfDe qu\u00e9 vino est\u00e1s m\u00e1s orgulloso y por qu\u00e9?<\/strong><\/p>\n<p>Es dif\u00edcil decir de qu\u00e9 hijo te sientes m\u00e1s orgulloso o a cu\u00e1l quieres m\u00e1s, y con los vinos igual. Yo acabo de \u201cadoptar\u201d (llevo pocos meses en Delgado Zuleta) unos magn\u00edficos vinos que llevan mucho tiempo elabor\u00e1ndose, con una calidad excepcional, y mi objetivo en estos momentos es mantener esa alta calidad. Por ello estoy encantado con todos. Quiz\u00e1s con Vi\u00f1a Galvana Cosecha 2016 tenga una especial sensaci\u00f3n, porque es un vino que s\u00ed he desarrollado personalmente.<\/p>\n<p><strong>\u00bfCu\u00e1l es tu vino de Jerez favorito y por qu\u00e9?<\/strong><\/p>\n<p>El vino que m\u00e1s me gusta es el amontillado, ya que une los dos tipos de crianza que tenemos en esta zona: biol\u00f3gica y oxidativa. Esto hace que estos vinos tengan una complejidad importante tanto en nariz como en boca. Adem\u00e1s, son vinos muy f\u00e1ciles de combinar con diferentes platos.<\/p>\n<p><strong>\u00bfCu\u00e1l es tu maridaje perfecto con vino de Jerez?<\/strong><\/p>\n<p>No tengo solo uno, ya que creo que nuestros vinos son magn\u00edficos para armonizar con muchos platos, por ello te dir\u00e9 varios:<\/p>\n<p>Una sopa de galeras con una manzanilla como La Goya o Goya XL<\/p>\n<p>Un pat\u00e9 con amontillado Zuleta<\/p>\n<p>Una carne roja con Quo Vadis?<\/p>\n<p>Helado de turr\u00f3n con PX Montegudo<\/p>\n<p><strong>El vino de jerez posee particularidades que lo distinguen de cualquier otro vino\u2026 \u00bfqu\u00e9 hecho crees que hace al vino de Jerez tan interesante?<\/strong><\/p>\n<p>Para m\u00ed lo m\u00e1s importante de nuestros vinos y nuestra enolog\u00eda es que somos capaces de hacer muchos vinos diferentes con una sola variedad de uva, la palomino, y adem\u00e1s tenemos otras dos variedades, la pedro xim\u00e9nez y la moscatel, que nos permiten hacer los blends para conseguir una gama infinita de matices, colores, sabores, etc., que implican una variedad de vinos inmensa.<\/p>\n<p>Todo esto <em>aderezado<\/em> con el sistema de Soleras y Criaderas nos permite a los en\u00f3logos elaborar vinos a gusto de cualquier consumidor: p\u00e1lidos, secos, semisecos, dulces, oscuros\u2026<\/p>\n<p>Yo siempre digo que los en\u00f3logos de esta zona tenemos una paleta de colores, olores y sabores que, bien utilizada, permite hacer un vino para cada momento y para cada consumidor. Hacemos \u201cvinos de autor\u201d cada d\u00eda, y creo que se le debe dar la importancia que tiene.<\/p>\n<p><strong>\u00bfQu\u00e9 planes de innovaci\u00f3n y desarrollo ten\u00e9is dise\u00f1ados? \u00bfD\u00f3nde ves el futuro del Vino de Jerez?<\/strong><\/p>\n<p>Como he comentado, solo llevo nueve meses en Delgado Zuleta, y lo que he podido comprobar hasta ahora es que hay una apuesta por la innovaci\u00f3n. Me he encontrado proyectos que ya estaban en marcha y que vamos a continuar, como la manzanilla ecol\u00f3gica Entusi\u00e1stico, que es la primera manzanilla ecol\u00f3gica del mundo; Goya XL, concepto de manzanilla reposada en rama; Tosca Cerrada, proyecto en colaboraci\u00f3n con el prestigioso sumiller Mario Rovira, etc.<\/p>\n<p>A corto plazo vamos a recuperar vinos y marcas de la casa que han sido se\u00f1eras, como el amontillado Viejo Zuleta y el oloroso Las Se\u00f1oras. Fuera de lo que son los vinos del Marco tambi\u00e9n estamos trabajando en productos novedosos y que creo que pueden atraer a j\u00f3venes consumidores, como el rosado LOLA o nuestro Vino de la Tierra de C\u00e1diz, Vi\u00f1a Galvana, y estamos desarrollando una serie de productos que iremos presentando poco a poco.<\/p>\n<p>Creo que el futuro del vino de Jerez est\u00e1 en atraer a los nuevos consumidores, educarlos y ense\u00f1arles c\u00f3mo pueden tomar nuestros vinos, que no son los \u201cvinos de la abuela\u201d, y si para ello tenemos que comenzar con vinos sencillos y f\u00e1ciles, tendremos que hacerlo.<\/p>\n<p><strong>\u00bfCu\u00e1les son tus primeros recuerdos sobre el vino de Jerez?<\/strong><\/p>\n<p>Tengo 55 a\u00f1os y, aunque nacido en C\u00e1diz, me he criado en Jerez, por lo que en mi juventud -me considero joven todav\u00eda- pasear por Jerez era respirar el aroma a vinos, tanto por las bodegas que hab\u00eda por toda la ciudad como por los antiguos
