La bodega Delgado Zuleta, la m\u00e1s antigua del Marco de Jerez, ha llegado a un acuerdo con Viena La Baguette, una de las panader\u00edas artesanas m\u00e1s importantes de Espa\u00f1a, para elaborar las dos variedades del primer pan de vendimia del mercado.\u00a0Para la primera de ellas, en su elaboraci\u00f3n se utilizan los hollejos resultantes de la primera prensa de la uva palomino, es decir, las pieles, pulpas y semillas que quedan tras prensar de forma mec\u00e1nica la uva. Al tratarse de la primera prensa, la fruta a\u00fan cuenta con parte de la pulpa, lo que sin duda potencia el sabor del pan.<\/p>\n<p>&nbsp;<\/p>\n<p>El uso de la manzanilla La Goya requiere de una reducci\u00f3n previa, para incorporarlo a continuaci\u00f3n a la masa madre del pan, lo que consigue combatir la alta volatilizaci\u00f3n del alcohol en el horno. Otro de los elementos fundamentales de la receta es tambi\u00e9n gaditano: el aceite de oliva virgen extra de la Sierra de C\u00e1diz, de la cooperativa Virgen de los Remedios de Olvera.\u00a0Adem\u00e1s de este pan con manzanilla, Viena La Baguette elabora otro con moscatel de la Gama Zuleta, un vino dulce natural, con uvas procedentes de vi\u00f1edos pr\u00f3ximos al litoral, que aporta al pan las notas dulces que lo convierten en el complemento perfecto para, por ejemplo, una tabla de quesos andaluces.<\/p>\n<p>&nbsp;<\/p>\n<p>El \u00e9xito del producto se debe al saber hacer de la familia Fern\u00e1ndez, quinta generaci\u00f3n de maestros panaderos, con Paco Fern\u00e1ndez al frente. Los panes, que ya se encuentran en algunos de los mejores restaurantes del pa\u00eds, se pueden comprar en el obrador y las panader\u00edas que Viena La Baguette tiene en Madrid.<\/p>","protected":false},"excerpt":{"rendered":"<p>Y el vino se hizo pan.
